Recipes

Just thought I would post the recipe for the Texas Sheet Cake. Be sure and read the directions as this cake is not made as you would normally make a cake. I got this recipe from recipezaar.com so I cant take the credit for it. Just would highly recommend it to yall.

Texas Sheet Cake *****

Batter:
1 cup margarine or butter, melted (I used margarine)
1 cup water
4 T. cocoa
2 cups white sugar
2 cups plain flour
1/2 tsp. salt
1 tsp. baking soda
2 eggs
1/2 cup sour cream
1 tsp. vanilla

For Batter: Put margarine, water and cocoa in a large pan and bring to a boil. Remove from heat and add the rest of the batter ingredients. Mix with electric mixer until very smooth. Pour into an 11 X 16 X 1.5-inch jelly roll pan.
Bake at 350 degrees for 20 minutes.

Frosting:
1/2 cup margarine or butter
4 T. cocoa
6 T. milk
1 lb. box confectioners sugar
1 cup walnuts, chopped (I used pecans)
1 tsp. vanilla

For Frosting: Bring margarine, cocoa and milk to a boil. Remove from heat and stir in confectioners sugar and nuts. Add vanilla. Pour on cake as soon as it comes out of the oven.

Notes: I mixed the batter as instructed. Next time I'm gonna add 1 tsp. cinnamon and 1 tsp. instant coffee as suggested in the comments section. I also used a slightly bigger pan which made them thinner but still just perfect for what I needed. Also do not start the frosting until about 5 minutes before cake comes out of the oven as you don't want it to harden before needing. They tasted like a fudgy, chewy brownie and I could of ate half the pan. This cake is perfect for a large gathering as it makes a lot. I got 48 servings out of my pan. I give this recipe a 5*.

Sunday Music Meal

We had a great time Sunday after church at our Music Meal fundraiser. The spaghetti prepared by Bro. Billy was great w/toasted French Garlic Bread and a good green salad. Then we had a table full of desserts which we all love. The Texas Sheet Cake was loved by all and Sis. Julie said "It's heavenly". Thank God it was all eaten because if I had to take it home, well let's just say it wouldn't of lasted very long. I'm gonna post the recipe in case you are tempted to make it. The Jello Poke Cake was enjoyed but not as well as the Chocolate...the chocolate always wins out. I think the Jello cake would be a good recipe if your looking for something not to heavy. Cool and springish...Is springish a word? Oh well, gotta post that one too so I'll have it. I stayed after our lunch and had a great time of fellowship with 3 other ladies of the church. It was great to laugh and be around some just plain good folks.
I didn't realize it was so late so will post recipes tomorrow. Until then....

Oh WoW....I can see this is gonna be fun....Well I learned facebook so I know I can do this....I'm gonna try again to post the finished Texas Sheet Cake...Its a homemade chocolate cake w/pecan fudge frosting. It is baked in a jelly-roll pan so it serves a lot. The Jello Poke Cake is started with a white cake mix and finishes w/Jello poured over the cake and a frosting made of Cool Whip, Instant Vanilla Pudding and Powdered sugar. This cake has to be refrigerated. Maybe I'll soon learn how to write under each pic like the pros do. (Pros being anyone out there who is able to do that simple task, and thats not me.) lol I'll probably post the recipes tomorrow.

Baking for Joy

Hi and Welcome to my brand new blog started today, Saturday, March 20, 2010. I named it MoysJoy because my nick name is Moy and the Joy of the Lord is my strength. I decided this would be a good place to write a journal of my days, good and bad, happy and sad. BUT mostly, to show that the joy that Father God gives me keeps me going thru the days and nights of being alone for the first time in my life. I try to stay busy doing for others for this is what brings joy to my heart.
Today I was busy baking for my church fund raiser. We have a monthly meal after the service to raise funds for our Music Ministry. Its lots of fun and a great way to join in, be around people of like faith. I wanted to make something different so here's what I ended up with. Texas Sheet Cake and Old Fashion Jello Poke Cake. Hopefully I can navigate thru this and post pics.
